Marillenkuchen (Apricot cake)

Ingredients

2 ¼ cups flour
2/3 cup sugar
4 eggs
0.32 oz. vanilla sugar
0.16 oz. baking powder
½ lemon (juice)
Apricots
½ cup oil
½ cup water
Pinch of cinnamon
Chopped almonds

Directions

Rinse the apricots and cut them into halves. Remove the stones.
Separate the eggs. Mix the vanilla sugar, yolks, lemon juice and cinnamon and blend it until foamy. Beat egg whites until whipped well. Carefully add flour, baking powder, water and oil in turns. Fold the beaten egg whites in. Spread the mixture onto a baking tray lined with baking paper and put the apricot halves on it. Spread chopped almonds. Bake it in the oven at 350° Fahrenheit for approx. 40 minutes.
